Sheila’s Famous “Open House” Zucchini Bread

An Original Recipe By Sheila Joynes

Preheat oven to 325 degrees

3 cups of flour

3/4 teaspoon salt

1 teaspoon Baking Powder 

1 Teaspoon Baking Soda

1 ½ teaspoon Cinnamon

3 medium eggs

1 cup of cooking oil 

2 ¼ cups sugar

1 tablespoon Vanilla extract

2 cups grated Zucchini.

1 cup of chopped nuts if desired

 

Grease and flour five small loaf pans

Sift flour and mix dry ingredients in a bowl. Beat eggs and add oil, sugar and vanilla in a bowl. Add dry ingredients and beat well. Stir in nuts and grated Zucchini until well blended. Spoon batter into loaf pans. 

 

Bake for 15 minutes and then add a crumb topping: 

Mix ingredients together until crumbly. 

½ cup brown sugar, ½ cup oatmeal, ¼ cup chopped Walnuts, ¼ cup flour, ¼ teaspoon cinnamon, ¼ cup butter.

Continue baking an additional 25 minutes or until done
